Soy Lecithin and Human Health

What do we know about soy lecithin?
A French scientist discovered lecithin back in 1844 through the isolation of egg yolk. Soy lecithin was discovered by the Germans and Chinese from the Northern China during the processing of soy oil in 1930's. Lecithin is comprised of unsaturated fatty acids, choline and phosphorus. Soy is superbly rich in lecithin. However, due to manufacturing processes, a lot of soy lecithin has been lost and only certain unique processes could maintain a high level of soy lecithin in the finished products. Thus, the lecithin contents in soy foods in the market place vary. Soy lecithin in either powder or granules form isn't palatable and compliance is an issue for long-term consumptions. Thus, a lot companies have marketed soy lecithin in capsules gel form. EnerFlex is an exceptional case where the finished product contains an average of 19% (19g) per 100g powder of soy lecithin in addition to 35g soy protein and 11g of omega 3,6 fatty acids, vitamins and minerals etc. Commercially used soybean usually contains an average of 1.3 -2.1% lecithin.

Lecithin an important component in human cells and tissues particularly the liver and central nervous system. 1% of human body weight is made up by lecithin and lecithin being regarded as the foundation of tissues and organs formation. Some scientific studies had demonstrated that lecithin might help in slowing down aging process, improving fetus development and enhancing memory in children.
